Spiced cut-out biscuits

These biscuits can become stars for Christmas, circles for a lunchbox or any shape your cutters make. Chill the dough if it becomes difficult to handle.

Ingredients

  • 250 g gluten-free plain flour
  • 100 g softened butter or suitable baking spread
  • 100 g caster sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder
  • Half a teaspoon ground cinnamon
  • Half a teaspoon ground ginger

Method

  1. Cream the butter and sugar, then beat in the egg and vanilla.
  2. Stir in the flour, baking powder and spices. Chill for 20 minutes.
  3. Roll between sheets of baking paper to about 5 mm thick. Cut shapes and transfer to a lined tray.
  4. Bake at 180°C conventional for 10–14 minutes until the edges colour lightly. Cool before decorating; check icing and decorations for relevant allergens.
