No-churn vanilla ice cream

A freezer dessert made with lactose-free dairy ingredients. Choose products specifically labelled lactose-free rather than assuming homemade lactase treatment removes every trace.

Serves or makes: 8 small servings

Ingredients

  • 300 mL lactose-free whipping cream
  • 400 g lactose-free sweetened condensed milk
  • 1 teaspoon vanilla

Method

  1. Chill the ingredients before starting. Whip the cream until it holds soft peaks.
  2. Fold the condensed milk and vanilla through gently, preserving as much air as possible.
  3. Transfer to a covered freezer container and freeze for at least six hours.
  4. Stand briefly before scooping. Contains milk protein; lactose-free condensed milk availability varies, so check the label carefully before buying.
