Fluffy pancakes with lactose-free milk
A weekend breakfast with familiar pantry ingredients. Cook a small first pancake to check the heat before making the rest.
Serves or makes: About 12 pancakes
Ingredients
- 225 g plain flour
- 2 teaspoons baking powder
- 15 g caster sugar
- 2 eggs
- 300 mL lactose-free milk
- 25 g melted butter
- A little oil for the pan
Method
- Combine flour, baking powder and sugar in a bowl.
- Whisk eggs, milk and melted butter separately, then stir into the dry ingredients until just combined.
- Heat a lightly oiled frying pan over medium heat. Spoon in small rounds of batter.
- Turn when bubbles form and the edges begin to set; cook the second side until golden and the centre cooked. Serve with a topping you tolerate. Contains wheat, egg and milk protein.
