Fluffy pancakes with lactose-free milk

A weekend breakfast with familiar pantry ingredients. Cook a small first pancake to check the heat before making the rest.

Serves or makes: About 12 pancakes

Ingredients

  • 225 g plain flour
  • 2 teaspoons baking powder
  • 15 g caster sugar
  • 2 eggs
  • 300 mL lactose-free milk
  • 25 g melted butter
  • A little oil for the pan

Method

  1. Combine flour, baking powder and sugar in a bowl.
  2. Whisk eggs, milk and melted butter separately, then stir into the dry ingredients until just combined.
  3. Heat a lightly oiled frying pan over medium heat. Spoon in small rounds of batter.
  4. Turn when bubbles form and the edges begin to set; cook the second side until golden and the centre cooked. Serve with a topping you tolerate. Contains wheat, egg and milk protein.
