Little chocolate-dipped cake bites

Bake the mixture in small moulds and dip the cooled cakes in chocolate. Decorations are optional; check their ingredients if avoiding particular foods.

Serves or makes: About 30 small bites

Ingredients

  • 150 g softened butter
  • 150 g caster sugar
  • 3 eggs
  • 150 g gluten-free self-raising flour
  • 1 teaspoon vanilla
  • 150 g chocolate suited to your diet

Method

  1. Heat a conventional oven to 175°C and grease small cake-pop or mini-muffin moulds.
  2. Beat butter and sugar until light, then add eggs one at a time. Fold in flour and vanilla.
  3. Fill moulds about two-thirds full. Bake for 12–18 minutes, depending on size, until cooked through.
  4. Cool completely, then dip or drizzle with melted chocolate. Leave to set. Keep portions modest and check the chocolate for milk and other allergens.
